Roasted Strawberry & Tahini Prebiotic Pudding

This delicious combination of roasted strawberries and creamy tahini is a great way to get a good dose of prebiotics in the form of fibre and resistant starch. This recipe was also a lot of fun for my kids who were able to get creative deciding what toppings to add. For breakfast, they chose some shredded unsweetened coconut and sunflower seeds and for dessert they drizzled some melted dark chocolate over top.
