Mushrooms to the rescue

This past holiday season I held a dinner party.  I pride myself on my ability to cook for just about everyone regardless of their dietary restrictions but this time around I was having “cookers block”.  For some reason I could not come up with something to make for my friend with celiac disease who also happened to be vegan.  The day of the dinner I started messing around in the kitchen and created these amazing vegan, gluten free stuffed mushroom caps.
