Cheesy Quinoa Egg Muffins with Zucchini
I tried this recipe for the first time a few weeks ago. I have now made it more than 3 times in as many weeks. They are just that good, easy and jam-packed with healthy and delicious ingredients. As an extra-added bonus, they are easily freezable, and make a great grab-and-go breakfast. However, when you make as many of them as I have in a short period of time, you quickly realize that the reason you've had to make them so many times, is that they make a great snack and also compliment a light salad dinner perfectly!
