I swear these cookies are delicious

I love a good chocolate chip cookie.  I'm a soft, half baked type of gal so when asked to make gluten free, egg free vegan chocolate chip cookies that were also delicious I assumed such a thing could not be done.  This recipe is pretty darn close and in fact, I enjoyed the nuttiness from the gluten-free almond flour.    Check out the recipe below

  below   Additional Notes:  I made this recipe with a client but was in a rush and forgot to grab baking powder on my way.   Kitchen hack; mix 1/2 teaspoon baking soda with 1/2 cup plain yogurt or buttermilk, sour milk or mix ¼ teaspoon baking soda with ½ teaspoon tartar cream.  Alternative: 1.5 cups Almond Flour instead of 1 cup almond flour and 1/2 cup coconut flour  Options: Add 1/4 cup nuts  Replace chocolate chips with dried fruit such as raisins
