A dip not meant for close up photos

I just returned from a weekend away, and having forgotten to clear out my crisper (crisper?do non-British people actually say crisper? Well guess what this one just did) before I left, I had some not so fresh looking veggies staring back at me when I opened my fridge. What better way to salvage my eggplant, pepper and zucchinis than by making them into this easy, creamy dip. This is the perfect topping to the gourmet shmickshmackers of my last post!
