Cheesy Crustless Quiche Cups - Now say that 10 times fast

I wish everyday could start off with that Monday motivation, where I suddenly get a burst of energy to prep my meals Sunday night for the entire week. By Wednesday (okay, maybe Tuesday) that feeling starts to die off when I reassess the growing To Do list. Nevertheless, I was feeling rested after the long weekend and decided to do some breakfast prep with these little bite sized quiches. I don't think I could get sick of this recipe because there are endless combinations. Swap the mushroom and bell pepper for broccoli and cheddar, sun-dried tomato basil, or whatever flavour you prefer. If you can set aside ten minutes out of your morning to do the prep, you'll be set for breakfast for the next five workdays (depending on how willing you are to share!). Enjoy.
