The Most Incredible Hemp Heart, Spinach and Basil Pesto Recipe

Today's post is dedicated to all the moms and dads whose children have inexplicably decided to become vegan or vegetarian.  This week that child was mine.  I think I would be more understanding if my child were older and able to explain why she doesn't want to eat meat, but when she has spent the weekend torturing her dog and brother I find it hard to believe that she has suddenly gained a deep-seated respect for animal life (and human, for that matter).  As a dietitian, food-related challenges are supposed to be a breeze.  Well, here's what I know:

  1. No matter how hard I begged, pleaded or attempted to bargain, my tiny dictator would not have it.
  2. If you leave chairs or tables near snack cabinets, said tiny dictator will find a way into said snack cabinet and eat an entire container of Shasha ginger cookies.  She will then deny doing so (with a mouth full of said cookies).
  3. Sometimes, just sometimes, this dietitian can get creative enough in the kitchen to meet that tiny dictator's requirements for both a delicious and animal-loving meal that is also a source of protein (and omega 3 fatty acids).  1 point mom; 190,000 points tiny dictator.
