New Old-Fashioned Chicken

The beautiful presentation of this roast chicken is equally matched by its delicious flavouring. Complete with protein and greens, serve up with a side of mashed sweet potatoes (or roast veg to take full advantage of the oven and to save time) and a simple side salad and there's dinner for the whole family. Roasting chicken is probably my favourite way to prepare it as I find the crispy skin adds the most flavour; but the citrus from the salsa verde takes it to the next level.
